Notes: Ingredients

  • Turkey

    • Today’s domestic turkey is a descendant of the wild turkey native to northern Mexico and the eastern US
    • Turkey is a rich source of protein.
    • Skinless turkey is low in fat (the white meat is lower in fat than the dark meat, mainly found on the legs)
    • Turkey meat is a source of iron, zinc, potassium and phosphorus.
    • Regular turkey consumption can help lower cholesterol levels. The meat is low-GI and can help keep insulin levels stable.
    • Turkey contains the amino acid tryptophan, which produces serotonin and plays an important role in strengthening the immune system.
    • It is also a source of selenium, which is essential for thyroid hormone metabolism. It also boosts immunity and acts as an antioxidant.
    • If you can, buy organic. Turkeys raised organically will have been treated humanely and are less likely to contain pesticides and herbicides.
  • Hummus

    • “Hummus” (sometimes spelled hummous) comes from the Arabic word meaning “chickpeas”, and the complete name of the prepared spread in Arabic is ḥummuṣ bi ṭaḥīna which means “chickpeas with tahini”.
    • It’s a dip or spread made from cooked, mashed chickpeas or other beans, blended with tahini, olive oil, lemon juice, salt and garlic.
    • Hummus is popular throughout the Middle East (including Turkey), North Africa (including Morocco), and in Middle Eastern cuisine around the globe.
    • It can be found in most grocery stores in North America.
    • Hummus provides roughly 170 calories for 100 grams, and is a ‘good to excellent’ (more than 10% of the Daily Value) source of dietary fiber, B vitamins, and several dietary minerals.
    • Fat content, mostly from tahini and olive oil, is about 14% of the total; other major components are 65% water, 17% total carbohydrates, including a small amount of sugar, and about 10% protein
    • In May 2010, the Guinness World Record for the largest dish of hummus in the world returned to Lebanon. The winning dish, cooked by 300 cooks in the village of al-Fanar, near Beirut, weighed approximately 10450 kg (roughly 23000 lb) and is said to have included eight tons of boiled chick peas, two tons of tahini, two tons of lemon juice and 70 kg (154 lb) of olive oil!
  • Avocados

    • Avocados are low in sugar and they contain fibre, which is good for keeping you feeling full – and therefore, less likely to snack soon after you’ve eaten.
    • Avocados are high in fat – but it’s the ‘good’ kind of fat (mono-unsaturated), which actually helps lower cholesterol, provided you eat them in moderation.
    • Avocados contain 20 different vitamins and minerals, including the following:
