Avocado and Egg Breakfast Tortillas

The recipe I’m going to show you todayresults in a really simple, filling dish that’s high in protein and fibre, and not too high in calories – with around 300 per serving.
And it works really well as a breakfastdish, or a lunchtime or post-workout snack.
So let’s get started on our Avocado andegg tortillas...

Ingredients
  

  • 2 whole grain tortillas 6 inch diameter
  • 2 eggs
  • 2 tsp olive oil
  • 1 avocado peeled and seeded
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • Few sprigs of fresh coriander optional

Instructions
 

  • Warm tortillas in the microwave for approximately 30 seconds and set aside on a plate.
  • In a small bowl, mix the avocado and lemon juice until you reach a smooth consistency, then season with as much salt and pepper as desired.
  • Spread the avocado mixture on each tortilla and again, set aside.
  • Put the olive oil in a frying pan /skillet, over a medium heat, and then add the eggs, before reducing the heat to low
  • Fry the eggs until the whites are completely set and the yolks begin to thicken (but make sure they’re not over-cooked or you’ll miss out on the pleasure of bursting them later!)
  • Put one egg on each tortilla and serve – with chopped, fresh coriander if desired.
